Short answer: a solid-copper Cat6 or Cat6A patch cable is the best Ethernet cable for gaming on a PS5, Xbox Series X or a gaming PC. It will not lower your ping compared with Cat8, because ping is set by your route to the game server, not by the cable category. Buy Cat8 when you want a shielded cable on a desk full of power bricks, or when you plan to move to a 10 Gbps switch. Buy Cat6A in the walls. Whatever you choose, get off Wi-Fi: that is the change you will feel.
What a cable can and cannot change
Latency inside an Ethernet cable is about 5 nanoseconds per meter, and it is the same for Cat5e, Cat6, Cat6A and Cat8. A 50 ft cable adds a quarter of a microsecond. Your ping to a server is measured in milliseconds, a thousand times larger, and all of it happens beyond your router. No category of cable moves that number.
What a cable can do is drop packets. A damaged cable, a copper-clad aluminum (CCA) cable, or a cable with a bad crimp forces retransmissions, and retransmissions show up as stutter, rubber-banding and sudden ping spikes. So the properties that matter for gaming are the boring ones: pure copper conductors, a proper twist, an undamaged jacket and connectors that click home.
Wi-Fi is the real problem in most rooms. Wireless adds jitter (variation in latency) of anywhere from 2 to 30 ms depending on interference, walls and how many devices share the channel. A wired connection makes that variation close to zero. That is why competitive players wire up, and why the category on the box matters far less than the fact that it is a cable at all.

Consoles have a 1 Gbps Ethernet port. Most gaming PCs have 1 Gbps or 2.5 Gbps; a few motherboards ship 10 Gbps. Every category in the table carries all of those speeds at patch-cable lengths, which is why Cat6 wins on value for a straight console-to-router link.

Desk with a power strip, monitor bricks and a PC under it: a shielded Cat8 S/FTP or shielded Cat6A patch cable. The foil and braid keep switching-supply noise out of the pairs, and the shield grounds through the plug shell at the switch. This is the situation where Cat8's construction actually earns its price.
Router in another room: pull solid Cat6A through the wall and terminate on keystone jacks, then use short patch cables at each end. Solid conductor holds signal over long runs; the 100 m channel limit includes both patch cables.
Pets or a cable that runs along the floor: an armored anti-rodent Cat6A patch cable. A stainless spiral under the jacket stops chewing and crushing, and it still plugs into a normal port.
Planning a 10 Gbps switch and NAS: Cat6A everywhere is the sensible spec; Cat8 for the handful of short links inside a rack.
Three things to check on any gaming cable
First, the conductor: it must say pure copper or bare copper. CCA is lighter, cheaper and fails at the exact moment you care about. Second, the gauge: 24 AWG for anything over about 15 ft. Third, the connectors: gold-flashed contacts and a strain-relief boot, so the plug survives being pulled out of a console fifty times.
